Melted cheese spuds

Starters for a party – 8 to 10 people.

12 medium sized potatoes,  a small tin of Kraft cheese, a packet of shredded Mozarella cheese, a bunch of fresh coriander leaves, a small packet of corn niblets, two spring onions, a small tub of sour cream and a tin of breadcrumbs.

wash potatoes well. jab them all over with a knife and put them into the microwave cook for 10 mins on one side and 10 on other. pls do an extra five mins if they are stubborn potatoes that refuse to get cooked, which is usually the case.

remove, cut horizontally into two halves and scoop out the cooked flesh leaving the jacket intact.

add rock salt and freshly ground pepper to the mashed potato. mix thoroughly with the two cheeses, finely chopped coriander and spring onions, corn and sour cream. add cooked deboned chicken or tuna if you hate being a vegetarian.

stuff this mix back into the jackets and sprinkle breadcrumbs on top. place on a sheet of lightly oiled aluminum foil and bake till you hear the cheese singing as it melts.. serve with any choice of spirits and watch the plate empty..
